For the Tacos:

  • 6–8 small flour or corn tortillas
  • 1 cup shredded cheddar or Colby Jack cheese (for crispy cheese lace)
  • ½ cup dill pickles, thinly sliced
  • ½ cup ranch dressing
  • 1 tbsp fresh chopped dill (optional)
  • 1 tbsp butter or oil (for cooking)

Optional Add-Ons:

  • Shredded lettuce
  • Thin red onion slices
  • Crumbled bacon
  • Hot sauce

  1. Season the Chicken: In a bowl, mix ground chicken with garlic powder, paprika, onion powder, salt, and black pepper. Mix gently.
  2. Smash & Cook: Heat a skillet over medium heat and lightly grease it. Place a tortilla directly in the skillet. Spread a thin layer of the seasoned chicken onto the tortilla and press firmly. Cook chicken-side down for 3–4 mins until browned, then flip and cook the tortilla side for 1–2 mins. Repeat with remaining tortillas.
  3. Make the Crispy Cheese Lace: Sprinkle small piles of shredded cheese onto the hot skillet. Let melt and brown (2–3 mins). Lift carefully and drape over a spoon handle or taco holder to form lace. Let cool and crisp.
  4. Assemble the Tacos: Drizzle ranch over chicken, add sliced pickles, sprinkle fresh dill, and top with crispy cheese lace. Add optional toppings as desired.
