Ingredients
- 4 medium fresh beets
- 1 cup apple cider vinegar
- 1 cup water
- 1–2 tablespoons raw honey (or maple syrup)
- 1 teaspoon sea salt
- ½ teaspoon black peppercorns
- 1 small garlic clove (optional)
- ½ teaspoon mustard seeds (optional)
- Fresh dill or thyme (optional)
Instructions

Cook the Beets:
Wash and trim beets. Boil for 25–35 minutes until fork-tender
OR roast at 400°F (200°C) for 40–45 minutes wrapped in foil.
Let cool, then peel and slice. -
Make the Brine:
In a saucepan, combine vinegar, water, honey, salt, and spices.
Heat gently until honey dissolves (do not boil hard). -
Jar It Up:
Place sliced beets in a clean glass jar.
Pour warm brine over beets until fully covered.
Let cool, then seal. -
Refrigerate:
Chill at least 24 hours before eating.
Best flavor develops after 2–3 days.
Storage
Keep refrigerated. Stays fresh for up to 2–3 weeks.
