Instructions:
- Mix the sodium alginate with strawberry juice in a blender until fully dissolved. Let it rest for a few minutes to remove air bubbles.
- In a separate bowl, dissolve calcium lactate in 2 cups of cold water.
- Using a dropper or small spoon, carefully drop small amounts of strawberry mixture into the calcium bath.
- Let the droplets sit for 1–2 minutes to form a gel-like skin around the liquid.
- Remove with a slotted spoon and rinse gently in cold water.
- Repeat until all mixture is used.
- Serve immediately as a topping for drinks, desserts, or enjoy as a snack.
